Position: Penrose Room – Jr. Sous

Pay-Rate: 20.63/per hour

Job Summary:

The Penrose Room celebrates the bon vivant lifestyle, contributions, life’s journey, and legacy of Spencer and Julie Penrose and offers concept driven dining experiences through showcasing seasonal and local produce, alongside a vibrant network of the world's finest farmers and purveyors complemented by industry leading wine and cocktail programs. The Penrose Room within the Broadmoor Hotel assists with maintaining the Forbes Travel Guide Five-Star and AAA Five-Diamond ratings for the Hotel.

This role will play a key part in the reopening of the Penrose Room and will aide in continuing to uphold our reputation and providing exceptional service to our guests.

As a member of the Penrose Room culinary team, this position will be responsible or preparing and presenting all area specific menu items. Will assist the Penrose Room Chef de Cuisine in daily responsibilities to include ordering, line management, execution of menu items, and assisting with managing a staff of 10-20 employees daily. This person must be able to follow direction of the Executive Sous Chef of Restaurants, Chef de Cuisine, and Sous Chefs in maintaining the highest standards of food quality, taste, and production and follow the standards set in place as a manager at the hotel.

Essential Duties and Responsibilities include the following and other duties may be assigned:

  • Proceeds in preparation of all menu items in assigned area daily.
  • Assists with Daily Line Checks
  • Assists with organization of product, equipment, and necessary paperwork.
  • Experience running a la carte services.
  • Experience with Production Lists.
  • Experience with area Inventories.
  • Experience with operating, maintaining, and cleaning necessary machinery.
  • Proceeds in preparation of all menu items in assigned area daily.
  • Precisely follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
  • Checks coolers for proper rotation of food items to prevent spoilage.
  • Ensures adequate amount of product is on hand and lets supervisor know what to order.
  • Takes required breaks, notifying supervisor prior to leaving station.
  • Maintain a clean, organized, and sanitary work area following safety guidelines.
  • Follow all hotel and kitchen policies and procedures.
  • Advise chef when food inventory is depleted.
  • Maintain a working knowledge of properly storing, rotating, and maintaining products.
  • Must be able to maintain ServSafe and health department standards.
  • Ability to check and complete mise en place and pars to set-up the station.
  • Prepare food so that quality, taste, and appearance of food is in accordance with Broadmoor standards while in a timely manner.
  • Maintain walk-in coolers and food storage areas daily.
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast-paced environment.
  • Ability to work cohesively as part of a team.
  • Ability to focus attention on guest needs, always remaining calm and courteous.
  • Give instructions to cooking personnel in fine points of cooking.

  • Applicable culinary degree and applicable experience or at least three (3) years of related culinary experience and/ or training; or equivalent combination of education and experience.
  • Must be 18 years old.
  • The employee is occasionally required to lift/pull/push up to 50 pounds and will be working in conditions that are both inside and outside at times.
