Job summary

LSG Sky Chefs in Houston, TX is seeking a Specialty Cuisine Sous Chef with a focus on Japanese cuisine to craft scratch-made meals for airline partners. You will ensure precise airline specifications, safety, presentation, and on-time delivery while leading a kitchen team during day shifts.

Relocation is available to join our 24/7 operation at the Sky Chefs facility near IAH. Applicants should have 5+ years in high-volume or specialty kitchens, proficiency in authentic Japanese cooking, HACCP

Qualifications

• Minimum 5 years of professional cooking in a high-volume or specialty kitchen.
• Airline catering experience is a plus but not required.
• Proficient in authentic Japanese cooking techniques.
• Ability to follow airline plating guides, recipe specifications, and food presentation standards.

Responsibilities

• Prepare and cook complete authentic meals from scratch for a designated airline customer.
• Execute authentic recipes with consistency and accuracy following airline standards.
• Plate dishes according to menu specs, ensuring flight-ready presentation and secure packaging.
• Adhere to airline HACCP and food safety regulations, including labeling and temperature control.
• Coordinate with kitchen stations for timely production and delivery of meal components.
• Maintain cleanliness and organization of workstations, equipment, and storage areas.
• Assist with menu presentations, chef tables, cycle changes, and testing of new airline menus.
• Monitor inventory, report shortages, and support waste reduction initiatives.
