Job description

POSITION DESCRIPTION: The Kitchen Staff works in a fast-paced and sometimes demanding environment helping to create and prepare delicious cannabis-infused meals.

PRINCIPAL DUTIES AND RESPONSIBILITIES:

  1. Produce high-quality hot foods with consistent flavor, texture, visual appearance, and proper medication.
  2. Execute all prep items needed for the day in a productive and clean manner. Refer to the prep list provided to categorize and prioritize the day's tasks. For example, pizza dough needs to be made with scaling, mixing, proofing, and portioning, which may take several hours. Plan start times accordingly to complete tasks within your shift.
  3. Accurately compute equations to create butter and oil portions for the hotline. Scale, mix, and divide these with precision. Mother butter and Mother oil are prepared for the Cafe by pastry.
  4. Lift up to 50 lbs.
  5. Request labels for all savory goods from the inventory (Slack channel #kitcheninventory), including samples.
  6. Work closely with inventory, requesting label adjustments as needed for vegan options requested by patients.
  7. Keep the Grill Prep and Pizza Prep stations clean and sanitized, with all products labeled correctly with a birth and death date.
  8. Perform quality checks on all food items at the beginning of each shift and periodically throughout. Discard items if in doubt.
  9. Prepare daily specials the night before they are to run.
  10. Maintain organization of the Hot Side inside the walk-in refrigerator, rotating stock using FIFO.
  11. Work with a neat and tidy station, following sanitation and food safety guidelines.
  12. Prepare for and execute daily orders efficiently.
  13. Ensure all dishes are scraped, soaked, scrubbed, rinsed, sanitized, and placed in drying racks. Collaborate with team members to keep up with dishwashing duties.
  14. Collect clean, dry dishes from drying stations and return them to their designated places.
  15. Assist in packaging all to-go items from any kitchen department.
  16. Perform daily cleaning, as well as weekly and deep cleaning tasks.
  17. Update par counts for ingredients and specials daily, noting shortages on the 86 whiteboard.
  18. Keep track of all items created during the day in the Mint Cafe Inventory Log.
  19. Update the #tempecafe Slack channel at the end of each shift with accomplishments and relevant information for teammates.
  20. Assist at off-site events as needed.
  21. Availability required for nights, weekends, holidays, and occasional double shifts.
