Meráki Greek Grill in Las Vegas seeks a General Manager to own daily operations, drive financial performance, and cultivate a culture of genuine hospitality and food excellence.

You will lead front- and back-of-house teams, ensure brand standards, manage P&L, and create a welcoming guest experience while building strong vendor relationships and local marketing.

This hands-on role requires a proven track record in fast-casual or full-service settings and a passion for people development.

Qualifications

• 3+ years of Restaurant General Manager experience (fast casual and/or full-service preferred).
• Strong financial acumen with experience managing P&L, food cost, and labor.
• Proven leadership and team development track record.
• Excellent communication, organizational and time-management skills.
• Passion for hospitality, food quality, and operational excellence.

Responsibilities

• Oversee daily front-of-house and back-of-house operations to meet brand standards.
• Recruit, hire, train, develop, and retain a high-performing restaurant team.
• Manage P&L, labor costs, and food costs to drive profitability.
• Ensure guest satisfaction by resolving issues and fostering a welcoming culture.
• Maintain adherence to food safety, sanitation, and health regulations.
• Create team schedules, manage inventory, and oversee ordering and vendor relations.
• Lead, coach, and mentor shift leaders and staff for growth.
• Drive local marketing to boost community engagement and sales.
