Job summary

FMG - Food Management Group, Inc. is seeking a hospital cook to prepare meals for patients, staff, and guests under the Food Services Director.

The role includes supervising in the Director's absence, following menus, and ensuring safety and sanitation in a high-volume kitchen. Candidate should have strong reading/writing skills, knowledge of cooking temperatures, and at least two years of experience in large-scale food preparation.

Qualifications

• Must be able to read and write and follow written and oral instructions.
• Thoroughly familiar with foods and preparation methods.
• Know proper cooking temperatures for meats and other foods.
• Able to space and time cooking of vegetables to preserve quality.
• Two years of training or experience in large scale commercial or institutional food preparation.
• Some formal or on the job training in food preparation, quantity estimation, requisitioning, storage and sanitation and safety.

Responsibilities

• Reviews menus to determine type and quantities of meats, vegetables, soups, desserts to be prepared.
• Plans cooking schedule with the Director to ensure timely service.
• Prepares cooking and seasoning of items for each meal.
• Measures and mixes ingredients using kitchen utensils to make sauces, soups, stews, casseroles, and desserts.
• Bakes, roasts, broils and steams meats, fish and other foods.
• Observes and tastes foods, adjusting ingredients to improve flavor or texture.
• Procures foodstuffs from storage areas as needed.
• Carves portions for individual servings and portions according to menu orders.
• Maintains adequate food quantities to cover service requirements.
• Tests food temperatures and adjusts heat controls and timers as required.
• Checks temperatures to ensure proper service.
• Assists with weekly food and supply orders following guidelines.
• Supervises and cooperates with others; assists on serving line.
• Keeps cooking area clean, neat, and orderly; complies with dress codes.
• Responds to workload changes and uses time productively.
