Job summary

DeMarco's Italian is seeking a hands-on Sous Chef to lead back-of-house operations, specializing in handmade pasta and fresh sauces. You will oversee prep, cooking, inventory and staff performance while upholding impeccable quality, sanitation and safety standards.

You will train line cooks, collaborate with culinary and management teams, and drive development of new pasta dishes and seasonal items. Availability for early mornings, nights and weekends is required to meet the demands of a busy

Qualifications

• Proven experience as a Sous Chef or senior kitchen leader in a pasta-driven Italian restaurant.

Responsibilities

• Oversee daily BOH operations including prep, cooking, service and cleanup.
• Lead handmade pasta production including dough mixing, rolling, shaping, filling, portioning, and storage.
• Prepare and supervise sauces from scratch ensuring flavor, texture and yield.
• Train and develop kitchen staff in pasta-making, sauce production, plating and recipe execution.
• Maintain pasta quality and proper techniques during high-volume service.
• Lead pre-shift meetings and conduct line, temperature, cooler and sanitation checks.
• Organize tastings and line checks to maintain quality and presentation.
• Collaborate on recipe books, procedures, and kitchen standards.
• Assist with new pasta dishes, sauces and seasonal menu items.
• Manage food ordering, receiving, inventory and cost control.
• Monitor food costs, waste, yields and kitchen labor.
• Ensure communication between FOH and BOH.
• Recruit, train and develop line cooks and prep staff.
• Inspire the kitchen team with hands-on leadership and professionalism.
• Direct kitchen service and expedite to ensure timely execution.
• Maintain all safety, sanitation and storage standards.
