Job summary

Graton Resort & Casino is seeking a skilled Gourmet Cook to lead and support high-volume kitchen operations in Sonoma County. You will grill, sauté, roast, and prepare meat and cold dishes while ensuring quality and guest satisfaction.

Collaborating with Executive and Sous Chefs, you will develop new ideas, follow recipes, and maintain safety, cleanliness, and professional conduct across the kitchen team.

Responsibilities

• Redefine hospitality while living and promoting Graton Resort & Casino values.
• Apply a range of cooking techniques across stations.
• Prepare base sauces, stocks, and soups.
• Operate kitchen equipment including slicer, steamer, fryer, ovens, grill, mixer.
• Train apprentice cooks in food production and equipment usage.
• Maintain grooming and uniform standards in accordance with policies.
• Ensure safety, sanitation, and DoH standards in the kitchen.
• Maintain cleanliness and proper stocking of ingredients and supplies.
