Job summary

Maroon in Las Vegas is seeking an experienced hospitality leader to oversee day-to-day operations, guest experience, and staff development.

You will assist with recruiting, scheduling, budgeting, and ensuring health, safety, and sanitation standards while coaching venue chefs and managers to deliver exceptional service in a fast-paced setting. This role requires strong financial acumen and superb communication, with the ability to stay calm under deadlines.

Qualifications

  • Five years of hospitality experience required.
  • 21+ years old and able to obtain state alcohol and food handler certifications.
  • Strong analytical skills to review financials and drive performance.
  • Excellent verbal and written communication with leadership ability.

Responsibilities

  • Assist with recruiting, hiring, training, scheduling and retention.
  • Manage day-to-day operations including floor and staff management.
  • Develop and implement annual budgets, policies and procedures.
  • Oversee health, safety and sanitation standards.
  • Coach and develop venue chefs and managers.
  • Analyze P&L, labor costs, and inventory to improve profitability.

Job description

The path to Maroon began in the dense forests of Jamaica’s Blue Mountains, where James Beard Award-winning Chef Kwame Onwuachi set out to learn the cooking techniques of his forebears. The result: an alluring medley of bold and untamed flavors unleashed by spice and smoke. For Chef Kwame, his Caribbean cuisine is a form of storytelling. Maroon brings the history of jerk and Jamaican cooking to a new audience and pushes the Las Vegas steakhouse into a new realm.

JOB FOCUS:

Focus is on, but not limited to the following:

  • Assists with recruiting, hiring, training, scheduling and retention
  • Evaluate and develop processes to maintain and improve performance and productivity
  • Assists in maintaining standards of health, safety and sanitation
  • Directly responsible for the coaching and development of venue chefs and managers
  • Administers progressive discipline and attendance points according to company policy
  • Defines Employee Standards of Conduct and ensures employee compliance
  • Manage day-to-day operations, including floor management, staff management and guest experience
  • Assists with the development and implementation of annual budgets, operating plans, policies and procedures, productivity, team engagement, and responsible for progress and completion
  • Administrative responsibilities including P&L analysis, maintaining budgets, costs of goods, labor costs, expenses, overtime, inventory and customer feedback
DESIRED QUALIFICATIONS:
  • Has five (5) years of hospitality industry experience required, educational experience considered
  • Must be at least 21 years of age or older
  • Ability to obtain a Nevada Alcohol Awareness Card and Nevada Food Handler Safety Training Card
  • Ability to analyze financial statements and modify operations to meet financial goals
  • The ability to maintain a \"sense of urgency\" attitude for the completion of responsibilities/tasks
  • Superior organizational and follow up skills with extreme attention to detail
  • Has an exceptional personality, attitude and excellent verbal and written communication skills
  • Must be polished, professional, friendly, and have the ability to multitask and take initiative in a fast-paced, high pressure, deadline driven environment
  • Strong email, PC and Internet skills - including MS Word, Excel, Power Point and Outlook
  • Dedication and willingness to go above and beyond in a hospitality driven environment
  • Strong guest service, interpersonal, organizational, analytical,problem-solving and leadership skills
