Job summary

Delaware North’s Patina Group is seeking an experienced General Manager to lead our team at Hundredfold, an American Brasserie in Elmont, New York. This role demands strong hospitality leadership, deep P&L accountability, and a passion for coaching a newly built team under award‑winning culinary direction.

Responsibilities include managing day-to-day operations, overseeing budgeting and labor costs, and driving guest satisfaction with a focus on food, wine, and cocktails.

Qualifications

• Minimum 2 years of experience as a General Manager in a full‑service restaurant.
• Strong wine and bar knowledge with sommelier certification valued but not mandatory.
• Experience managing P&L, budgets, labor costs and service standards.
• Willingness to work flexible hours including nights, weekends and holidays.

Responsibilities

• Manage day-to-day restaurant operations with a focus on guest satisfaction.
• Review financial data to measure productivity and identify cost-saving opportunities.
• Oversee workforce planning, training, and payroll, accounts payable/receivable, and P&L accounting.
• Establish SOPs for front-of-house supervision and collaboration with the Executive Chef.

The ideal candidate is a dynamic hospitality leader with exceptional multitasking abilities, strong client‑relations experience, and excellent financial acumen, including full accountability for P&L performance, labor management, annual budget oversight, and operating expense control. The General Manager will bring an expert understanding of food, wine, and cocktails and is deeply committed to delivering extraordinary guest experiences. Pay

Minimum – Anticipated Maximum Base Salary: $94,100 - $127,000 / year

In addition to base salary, we offer an annual bonus plan based on company and individual performance, or a role-based, uncapped sales incentive plan. The advertised pay range represents what we believe at the time of this job posting, that we would be willing to pay for this position. Only in special circumstances, where a candidate has education, training, or experience that far exceeds the requirements for the position, would we consider paying higher than the stated range. What will you do?

• Manage day-to day-restaurant operations with a strong focus on guest satisfaction
• Review financial and performance data to measure productivity, goal achievement, and to identify cost reduction and program improvement opportunities
• Oversee workforce planning, training, sales tracking, labor tracking, petty cash, deposits, inventories, ordering, account payables and receivables, and P&L accounting
• Establish standard operating procedures for supervising all front-of-the-house team members
• Collaborate with the Executive Chef on standard operating procedures in the front and back of the house to ensure food and menu specifications, food handling and food safety requirements, receiving, and storage procedures
  
  

More About You

• Minimum of 2 years of experience as a General Manager in a full-service restaurant, with similar volume, capacity, and standard of service
• Strong wine and bar knowledge; a sommelier certification from either Court of Master's or WSET is highly valued but not mandatory
• ServSafe, Food Safety Handler, and Training for Intervention Procedures (TIPS) certifications preferred but not mandatory
• Experience working with and an understanding of P&L's; able to monitor budgets and manage service and labor costs
• Ability to work flexible hours, including nights, weekends, and holidays in addition to normal business hours, as needed
• Experience using Microsoft Office Suite programs, point-of-sale systems, and online or digital reservation systems
