This is a first-level supervisory food service position responsible for overseeing the preparation and serving of food in a treatment program for youth in custody of the Missouri Division of Youth Services.

Responsibilities include:

• Preparing or supervising the preparation of meals using commercial kitchen equipment.
• Maintaining food service records.
• Completing requisitions for food and supplies.
• Following dietetic principles to coordinate and audit meals.
• Ability to lift or carry large portions of food or ingredients.
• Working long hours standing in a kitchen, possibly in high temperatures.

Supervisory duties include:

• Managing operations of a small to moderate-sized kitchen or shift supervising in a larger kitchen.
• Training and directing food service staff and offenders.
• Evaluating staff and helpers in food preparation and service.
• Monitoring safety and sanitation standards.
• Developing menus that meet nutritional standards.
• Preparing work schedules.

Knowledge, Skills & Abilities:

Knowledge of inventory procedures, ability to supervise and instruct staff, and proficiency with automated systems. Qualifications include:

• One or more years as a Food Service Worker with the Missouri system and a high school diploma or equivalent, OR
• Three or more years of commercial/industrial/institutional cooking experience with supervisory experience, OR
• An Associate Degree, OR
• Four years of food service experience.

Special requirement: Valid vehicle operator’s license.

Additional education in food preparation, dietetics, nutrition, or related fields may substitute for experience on a year-for-year basis.
