Responsibilities

  • Plan, coordinate and supervise the administrative and food service activities of the department.
  • Provide staff training, evaluate staff performance and implement changes as approved by leadership.
  • Assist the deputy warden in budget preparation and monitor expenditures.
  • Assist in development and implementation of new and revised policies affecting food services.
  • Provide meals that are nutritious, appealing and cost-effective.
  • Ensure quality of production and maintain cost controls within budget.
  • Supervise detainees assigned to food services and oversee special functions.
  • Coordinate with other facility staff concerning food services.

Job Description

Salary: $60,320

Work schedule: Full-time, Monday-Friday, 8am-5pm

Position Summary

Reports to deputy warden. Directly supervises the assistant food service supervisor and indirectly supervises the cook II/detainee leads. Responsible for the management of food services, which includes the cafeteria and special food services in compliance with Management & Training Corporation (MTC) and customer directives.

Essential Functions
  • Plan, coordinate and supervise the administrative and food service activities of the department.
  • Provide staff training, evaluate staff performance and recommend and implement department and personnel changes as approved by the deputy warden and coordinated with the manager, human resources prior to implementation.
  • Assist the deputy warden in the preparation of the departmental budget; monitor and control expenditures.
  • Assist in the development and implementation of new and revised policies and procedures affecting food services.
  • Provide appetizing, nutritious and realistically proportioned meals in a clean, comfortable environment.
  • Ensure quality of production and food purchase requirements. Maintain cost control to stay within budget limitation. Establish quantity of food to be prepared according to the menu and planned number of meals to be served.
  • Conduct inspections of food service areas.
  • Establish and follow tool control procedures for kitchen tools and utensils.
  • Supervise detainees assigned to food services area.
  • Supervise preparation of food services for special facility functions.
  • Prepare daily schedule, assign specific duties to staff and detainees.
  • Coordinate with other facility staff concerning food services.
  • Requires long periods of walking and standing.
  • Requires the pushing and pulling of food carts.
  • Regular attendance required.

It is expected that the incumbent shall perform other duties as assigned within his/her capabilities as determined by management.

Education And Experience Requirements

High school diploma or equivalent, technical training in food service operations and four (4) years of experience in food service operations, three (3) of which must be in a supervisory capacity are required. Knowledge of nutrition and methods of food cost effectiveness desired. Experience in correctional institution food services preferred. Valid food handler’s permit required, if required by the state of Texas. Must successfully complete required pre service training. Valid driver’s license in the state of Texas with an acceptable driving record required, unless waived by management.

Post Hire Requirements

Must successfully complete annual in-service training requirements and maintain appropriate facility clearance.
