Job description

Title: Director of Food and Nutrition Services

Reports to: Administrator

The Director of Food and Nutrition Services will:

  1. Manage and coordinate the day-to-day food service operation.
  2. Assure compliance with Local, State, and Federal requirements and laws regarding nutrition, sanitation, and safety regulations.
  3. Maintain necessary record-keeping.
  4. Select, train, schedule, supervise, direct, and evaluate assigned food service personnel.
  5. Responsibilities include but are not limited to:
    1. Manage, coordinate, and oversee the day-to-day food operations.
    2. Analyze effectiveness.
    3. Ensure compliance with Local, State, and Federal laws, regulations, safety, and sanitation procedures.
    4. Estimate and order the amount of food and supplies needed.
    5. Monitor and control expenditures and maintain assigned budget.
    6. Inspect receiving and storing of food and non-food items.
    7. Inspect unit pantry, dayroom, and dining room area daily to ensure compliance with health, safety, and sanitation requirements and regulations.
    8. Plan and coordinate daily work for efficient use of labor.
    9. Receive calls from employees and call substitutes as necessary.
    10. Direct, assign, schedule, and evaluate food service personnel; conduct training sessions for new employees.
    11. Train and assist employees in the proper handling of foods, correct use and care of equipment, and high standards of sanitation and safety.
    12. Maintain, prepare, and review a variety of menu production records, inventories, logs, and reports; accumulate data and input information into the computer as appropriate and file documents as necessary.
    13. Maintain and evaluate equipment for safety.
    14. Participate in meal and menu planning.
    15. Input new resident diets, food preferences, and allergies, and make changes to resident preferences as necessary.
    16. Enter menus into the systems and make changes as necessary.
    17. Perform meal rounds to ensure food acceptance and make menu changes as necessary.
    18. Supervise and participate in food preparation and distribution.
    19. Plan for catered events such as meetings, activities, and parties.
    20. Plan and coordinate food service operations with other departments.
    21. Communicate with team members on changes within the department.
    22. Schedule food committee meetings with residents and record minutes.
    23. Adhere to appropriate code of ethics (CC).
    24. Demonstrate regular attendance and punctuality.

The Director of Food and Nutrition Services will have the ability to:

  1. Analyze situations accurately and adopt an effective course of action.
  2. Operate a computer.
  3. Work independently with little direction.
  4. Exhibit oral and written communication skills.
  5. Understand principles and practices of supervision and training.

Qualifications of the Director of Food and Nutrition Services will include but are not limited to:

  1. Bachelor's or Associate's degree or higher in nutrition or hospitality; or
  2. Certified Dietary Manager; or
  3. Registered Diet Technician; or
  4. Certified Food Service Manager.

3+ years of experience as a Food Service Director in a large nursing home required.

Salary commensurate with experience.
