Job description

The position of Food Service Cook is one that prepares the meals, assures proper control of trustee kitchen workers, proper operation and accountability of equipment, and service of meals to the inmate population of the Corrections Facilities. The Food Service Cook will report directly to the Food Service Manager at the Corrections Facility.
Specific Duties and Responsibilities

Essential Functions:

Responsibilities require consistent attention and commitment to the agency's mission. All assigned duties and tasks are expected to be performed in an effective, efficient and safe manner. The staff member must accept the responsibility to support and promote the organization's mission and comply with its directives. Personal conduct and behavior (on duty as well as off duty) must be such that it does not bring disrepute or unnecessarily endanger the public's trust or confidence in the agency or its members. The position requires a high level of problem solving ability, self-initiative, and the ability and willingness to work a portion of the time without direct supervision. Successful performers are those who are capable and willing to make decisions that are consistently in line with the agency's mission, goals and objectives.

The duties of the Food Service Cook include, but are not limited to:

  • Maintaining a feeding schedule for all daily meals
  • Supplying special diets for inmates and updating special diet list daily
  • Maintaining a daily meal plan
  • Maintaining correct food and kitchen temperatures
  • Supervising trustee's work
  • Ensuring that trustees are neat, clean and healthy at all times
  • Being knowledgeable of all Sheriff's Office rules, regulations, policies and procedures, Florida Model Jail Standards, Corrections Department Operating Procedures and State of Florida Health Standards


Additional Duties:

Maintain food service logs.

Maintain proper food safety protocols; monitoring equipment, raw food preparation, storage, and sanitation. Teaching and directing inmates who are enrolled in the Culinary Course.
Minimum Education and Training

High School Diploma or GED and one to two years related experience and/or training; or equivalent combination of education and experience.


Minimum Qualifications and Standards Required

Certificates, Licenses, Registrations:
Florida Food Manager Certificate
Serve-Safe certified preferred

Physical Demands:
Tasks are performed inside and typically do not require heavy lifting, pushing, pulling or carrying heavy loads.

Work conditions are generally stable.

In addition, accruing atypical amounts of dysfunctional work time or requiring atypical amounts of supervisory counseling or remedial training will lead to removal with or without fault.
