An Expediter (or Expo) acts as the liaison between the wait staff and the kitchen. The wait staff directs all comments, requests, questions, and special instructions to the Expo, who then communicates with the kitchen. During peak times, the Expo is the sole communicator with the kitchen. The Expo should be friendly to all employees. Responsibilities include maintaining a clean and stocked expediting area (or window) and ensuring quality control of the food. An Expo must have a thorough knowledge of the entire menu and be able to recognize all dishes coming from the kitchen.
