Job summary

Populus in Denver, part of Crescent Hotels & Resorts, seeks a Food & Beverage Manager to lead daily operations across multiple outlets including Pasque, Stellar Jay, Little Owl and banquets. This hands-on role balances guest service, team development, and financial stewardship.

You will schedule, supervise, coach, and partner with culinary, rooms, sales, and events teams to deliver exceptional hospitality while working evenings, weekends, and holidays.

  • Previous Food & Beverage management or supervisory experience in a hotel, restaurant, resort, or similar hospitality environment.
  • Strong leadership, coaching, and team development skills.

As the Food & Beverage Manager at Populus, you will oversee the day-to-day operations of our Food & Beverage outlets and banquet operations, helping ensure every service delivers the quality, hospitality, and experience our guests expect.

This role works across Pasque, Stellar Jay, Little Owl, banquets, and other Food & Beverage operations, providing leadership, supporting associates, managing operational priorities, and ensuring each outlet operates efficiently and consistently.

The Food & Beverage Manager is a hands-on leader who balances guest service, team development, financial responsibility, and operational execution. This position requires a flexible schedule, including evenings, weekends, holidays, and varying shifts based on business needs.

Your Impact

As the Food & Beverage Manager, you will:

Food & Beverage Operations
  • Oversee daily operations across all Populus Food & Beverage outlets, including Pasque, Stellar Jay, Little Owl, and banquet operations.
  • Ensure each outlet consistently delivers exceptional food, beverage, and guest service.
  • Maintain a strong presence on the floor and provide hands-on leadership during service.
  • Monitor service levels, guest satisfaction, product quality, cleanliness, and overall presentation.
  • Ensure all Food & Beverage operations follow established standards, procedures, and hotel expectations.
  • Support opening, closing, and shift-change procedures across outlets.
  • Monitor business levels and adjust staffing and operational priorities as needed.
  • Work closely with Culinary, Stewarding, Rooms, Sales, and other hotel departments to ensure seamless operations.
  • Assist with special events, group functions, banquets, and hotel-wide programming.
Leadership & Team Development
  • Lead, coach, train, and develop Food & Beverage associates and supervisors.
  • Set clear expectations for service, professionalism, attendance, performance, and teamwork.
  • Conduct regular pre-shift meetings and communicate daily priorities, business levels, events, and operational updates.
  • Provide ongoing feedback and recognize strong performance.
  • Assist with onboarding and training of new associates.
  • Address performance and guest service concerns promptly and appropriately.
  • Foster a positive, inclusive, and accountable team environment.
  • Lead by example and remain willing to step into any area of the operation when needed.
Scheduling & Payroll
  • Create and maintain Food & Beverage schedules based on business levels, forecasts, events, and operational needs.
  • Ensure appropriate staffing levels across all outlets and banquet operations.
  • Monitor labor and make staffing adjustments as business needs change.
  • Review associate timecards for accuracy and ensure payroll is completed accurately and on time.
  • Address missed punches, scheduling discrepancies, and other payroll-related issues.
  • Monitor overtime and labor costs and communicate concerns to leadership.
  • Ensure associates are scheduled and paid according to established policies and procedures.
Guest Experience
  • Maintain a visible presence throughout Food & Beverage operations and interact regularly with guests.
  • Respond to guest feedback, concerns, and service recovery opportunities.
  • Empower associates to create thoughtful and personalized guest experiences.
  • Ensure guest issues are addressed promptly, professionally, and with appropriate follow-through.
  • Monitor reviews, guest feedback, and name mentions to identify opportunities for improvement.
  • Build strong relationships with hotel guests, local guests, vendors, and internal partners.
Financial & Operational Responsibility
  • Monitor outlet performance, sales, labor, and operating expenses.
  • Support revenue and profitability goals across Food & Beverage operations.
  • Assist with inventory management, ordering, receiving, and product controls.
  • Monitor proper portioning, product usage, and waste reduction.
  • Ensure proper cash-handling and point-of-sale procedures are followed.
  • Assist with purchasing and maintaining appropriate levels of food, beverage, and operating supplies.
  • Identify opportunities to improve efficiency, reduce waste, and support financial performance.
  • Complete operational reports and other documentation as required.
Banquets & Events
  • Oversee Food & Beverage execution for meetings, events, and banquet functions.
  • Partner with Sales and Events teams to understand event requirements and ensure successful execution.
  • Coordinate staffing, setup, service, breakdown, and guest needs for banquet functions.
  • Ensure event details are communicated clearly to all relevant Food & Beverage associates.
  • Be present for key events and provide hands-on leadership as needed.
Compliance & Safety
  • Ensure all Food & Beverage operations comply with applicable health, sanitation, safety, and alcohol service requirements.
  • Maintain high standards for cleanliness and organization across all outlets and service areas.
  • Ensure proper food handling, storage, and sanitation procedures are followed.
  • Address safety hazards and operational concerns promptly.
  • Ensure associates understand and follow hotel policies and procedures.
Other Responsibilities
  • Maintain a flexible schedule based on business needs, including evenings, weekends, holidays, and special events.
  • Participate in hotel leadership meetings and Food & Beverage meetings as required.
  • Assist with special projects and operational initiatives.
  • Support other departments when business needs require.
  • Perform all other job-related duties and responsibilities as assigned by leadership.
