Monarch Casino Resort Spa is seeking a Food and Beverage Trainer (Fine Dining) to develop and maintain training programs for our upscale outlets in Black Hawk, Colorado. you will lead classroom sessions, floor coaching, and evaluations to ensure polished, guest-focused service.

The role requires hands-on leadership, strong knowledge of fine dining, and the ability to work a flexible schedule across days, evenings, weekends, and holidays.

Qualifications

  • Minimum of 3 years of Food and Beverage experience, preferably in upscale settings.
  • Prior training, lead, supervisory, or management experience preferred.
  • Strong knowledge of fine dining service standards, guest relations, and etiquette.
  • Ability to train and motivate Team Members in classroom and live-service environments.
  • Excellent verbal and written communication; ability to work with multiple leaders.

Job Overview

The Food and Beverage Trainer is responsible for developing, implementing, and maintaining training programs for Food and Beverage Team Members, with a strong focus on upscale and fine dining service. This position supports service excellence across the department by training Team Members on elevated steps of service, menu knowledge, wine and beverage standards, guest engagement, table maintenance, food presentation, and departmental policies and procedures. The Food and Beverage Trainer partners with Food and Beverage leadership, Restaurant Managers, Room Chefs, and front-of-house teams to ensure Team Members are prepared to deliver consistent, polished, and memorable guest experiences. This role is hands-on and highly visible in the operation, providing classroom training, floor coaching, follow-up evaluations, and ongoing service reinforcement.

Responsibilities
  • Develop, coordinate, and deliver Food and Beverage training programs for new and existing Team Members.
  • Train Team Members on upscale and fine dining service standards, including professional guest interaction, sequence of service, table maintenance, coursing, suggestive selling, and proper service etiquette.
  • Support fine dining venues by reinforcing elevated service expectations, attention to detail, product knowledge, and professional presentation.
  • Conduct hands‑on training in dining rooms, kitchens, service stations, and other Food and Beverage areas to ensure standards are understood and consistently followed.
  • Partner with Restaurant Managers, Assistant Managers, Supervisors, Room Chefs, and Food and Beverage leadership to identify training needs and service opportunities.
  • Create and maintain training materials, checklists, tracking tools, guides, and other resources to support departmental consistency.
  • Coordinate onboarding schedules and training plans for new Food and Beverage Team Members.
  • Monitor Team Member progress during training and provide coaching, feedback, and follow‑up support.
  • Assist with menu rollouts, seasonal updates, beverage education, wine service standards, and food knowledge training.
  • Train Team Members on proper use of POS systems, service tools, reservation procedures, side work expectations, opening and closing duties, and departmental communication standards.
  • Reinforce compliance with company policies, health and safety standards, alcohol service requirements, food safety procedures, and regulatory guidelines.
  • Observe service during operations and provide real‑time coaching to improve guest engagement, accuracy, timing, and overall service execution.
  • Support pre‑shift meetings by providing training topics, service reminders, menu updates, and guest service focus points.
  • Maintain accurate records of training completion, certifications, follow‑up coaching, and departmental training progress.
  • Assist leadership in developing Team Members for growth opportunities within the Food and Beverage department.
  • Promote a positive, professional, and team‑focused work environment.
  • Lead by example and demonstrate Monarch’s service standards in all guest and Team Member interactions.
  • Support department initiatives designed to improve guest satisfaction, Team Member performance, revenue growth, and operational consistency.
  • Other duties as assigned.
Qualifications
  • Minimum of 3 years of Food and Beverage experience required, preferably in an upscale, fine dining, casino, hotel, or luxury resort environment.
  • Previous training, lead, supervisory, or management experience strongly preferred.
  • Strong knowledge of fine dining service standards, table service, guest relations, menu presentation, food and beverage pairings, and service etiquette.
  • Knowledge of wine, beer, spirits, cocktails, food preparation, food presentation, and proper service standards preferred.
  • Ability to train, coach, and motivate Team Members in both classroom and live-service environments.
  • Strong verbal and written communication skills with the ability to present information clearly and professionally.
  • Ability to work effectively with Team Members, managers, chefs, and senior leaders across multiple Food and Beverage outlets.
  • Strong organizational skills with the ability to manage multiple training priorities and follow up on completion.
  • Ability to provide constructive feedback in a professional and supportive manner.
  • Must be detail-oriented and able to uphold high service standards in a fast‑paced environment.
  • Ability to obtain and maintain required food safety and alcohol awareness certifications.
  • Computer proficiency required, including Microsoft Word, Excel, Outlook, and training documentation tools.
  • Experience with POS systems preferred.
  • Must maintain a professional appearance and demeanor.
  • Must be able to work a flexible schedule, including days, evenings, weekends, holidays, and varied shifts based on business and training needs.
  • Must be able to obtain and maintain any required licenses, certifications, or work cards.
Physical Requirements
  • Must be able to stand and walk for extended periods of time throughout the shift.
  • Must be able to move safely through crowded dining rooms, kitchens, service areas, and casino environments.
  • Must be able to use hands to handle, feel, carry, or operate objects, tools, training materials, and service equipment.
  • Must be able to reach with hands and arms, bend, stoop, kneel, crouch, and climb stairs as needed.
  • Must be able to occasionally lift, carry, push, or pull up to 25 pounds.
  • Must be able to speak and hear clearly in order to communicate with guests, Team Members, and leadership.
  • Specific vision abilities required include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.
