Job summary

Salamander Middleburg Resort & Spa is seeking a Pastry Cook to lead pastry production for a Forbes Five-Star luxury dining setting. You will craft desserts, breads, and breakfast pastries for fine dining, banquets, and special events, while maintaining the highest standards of quality and presentation.

Qualifications

• High school diploma or equivalent required.
• Culinary school training or pastry experience preferred.
• Experience in luxury hotel, resort, bakery, or fine dining is highly preferred.
• Strong pastry production and baking technique knowledge.
• Knowledge of food safety, sanitation, and HACCP standards.
• Ability to follow recipes, measurements, and schedules.

Responsibilities

• Prepare and present high-quality pastries, desserts, breads, and breakfast pastries for dining, banquets, weddings, and catering.
• Execute banquet dessert plating and buffet presentations per BEO specifications.
• Bake daily artisan breads and desserts; assist with plating stations as needed.
• Maintain clean, organized, and sanitary pastry kitchen; adhere to FIFO, labeling, dating, and rotation.
• Support cross-training and seasonal menu changes; ensure portion control and waste reduction.
