Job summary

The Mint Gaming Hall Cumberland is seeking an experienced Food & Beverage leader to support the Director in quality, cost control, and inventory management. You will respond to inquiries about financial performance, monitor procedures, and coordinate between front and back of house teams on the gaming floor and bars.

You will oversee a team of managers and chefs, ensuring consistent product standards, labor control, and staffing coverage across all outlets.

Qualifications

3-5 years of management experience in beverage and food service preferred.
High school diploma or equivalent.
Must be 21 years of age or older.
Must pass pre-screening and background checks.
Internal candidates must meet Transfer and Promotion policy requirements.
Ability to work varied shifts (day, swing, late-night, weekend, holidays).
Must obtain and maintain a Kentucky gaming/racing license.

Responsibilities

Support the Director of Food and Beverage in quality, cost control, and inventories.
Respond to inquiries regarding F&B financial performance.
Monitor and ensure compliance with F&B operating procedures.
Communicate with front and back of house management and staff.
Oversee beverage service flow on the gaming floor and at all property bars.
Provide day-to-day leadership to Beverage/Restaurant managers and chefs.
Perform duties of all restaurants, bars, and service wells.
Control labor within the department and ensure adequate coverage.
Hire, train, evaluate, and counsel F&B team members.
Ensure recipes, measurements, quantities, and standards are followed.
Ensure prep items meet approved standards and are properly stored.
Inspect areas for safety, sanitation, and labeling compliance.
