Job summary

MGM Resorts, inside Mandalay Bay, seeks an Executive Sous Chef to lead daily kitchen operations in a luxury dining environment. You will manage budgets, menus, staffing, and guest service to deliver exceptional dining experiences.

Responsibilities include training, policy compliance, and collaboration with the service team to ensure a seamless kitchen-dining room experience while upholding the highest sanitation and food safety standards.

Qualifications

• Bachelor’s degree or equivalent experience.
• 2+ years of culinary leadership experience in a chef role.
• Experience with collective bargaining agreements advantageous.
• Experience in high-volume luxury or fine-dining environments preferred.

Responsibilities

• Lead daily kitchen operations, budgets, labor, and scheduling.
• Oversee inventory, menus, and guest service standards.
• Support Executive Chef in staff training, HR, and policy compliance.
• Collaborate with service team to ensure seamless kitchen-to-dining room service.
• Maintain high health, sanitation, and safety standards.
