Qualifications

• Bachelor's Degree or equivalent experience.
• 2+ years of prior relevant experience.
• Experience managing employees under a collective bargaining agreement preferred.
• Experience in a high-volume or luxury/fine-dining restaurant preferred.

Responsibilities

The Job

The Executive Sous Chef of Four Sixes assists the Executive Chef in leading and directing the Assistant Chef and Kitchen teams. This role blends legendary Four Sixes heritage with MGM’s premier standards, driving operational grit and culinary excellence backstage to deliver an authentic, world-class guest experience.

The Day-to-day

• Lead and manage daily kitchen operations, labor, scheduling, and inventory with Four Sixes grit to drive profitability. Execute the business plan and partner with the Executive Chef to hit targets.
• Direct operating procedures, training, and authentic menus for the kitchen staff. Own the execution of company-wide initiatives while maintaining uncompromising standards of cleanliness and food safety. Ensure all kitchen staff complete required compliance training.
• Partner with the Executive Chef on HR responsibilities to foster a backstage culture of teamwork, mutual respect, and pride. Support diverse hiring, training, and succession planning in compliance with company policies and collective bargaining agreements.
• Engage with guests to deliver an legendary steakhouse dining experience, resolving complaints with swift hospitality. Collaborate with the service team to guarantee a seamless experience between the kitchen and dining room.
• Maintain expert knowledge of the steakhouse’s premier heritage menus, legendary beef program, and specialized kitchen equipment.

The Ideal Candidate

• Bachelor's Degree or equivalent experience
• 2+ Years of Prior Relevant Experience preferred
• Previous experience managing employees under a collective bargaining agreement preferred
• Previous experience working in a high-volume restaurant or previous experience in a luxury or fine-dining restaurant preferred
