Job summary

Four Seasons Resort Hualālai in Hawaii seeks an Executive Sous Chef with a passion for excellence to lead the kitchen team and deliver exceptional guest experiences. As a member of the Culinary team, you will drive discipline across disciplines to elevate food quality and service.

You will supervise staff, plan menus, manage labor and budgets, ensure sanitation, and maintain quality and consistency, with opportunities for development and industry-leading benefits.

Qualifications

• Three to five years previous experience in a culinary/food & beverage line position, or one to two years in a supervisory or assistant manager position.
• College degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required.

Responsibilities

• Coordinate selection, training, development, and evaluation of kitchen staff.
• Assist in planning and development of menus and ensure consistent food presentation.
• Control labor and operating expenses through scheduling, budgeting, purchasing decisions, and inventory control.
• Maintain sanitation standards set forth by Four Seasons and regulatory bodies.
• Maintain quality and portion control; monitor shipments and purchasing specs.
• Communicate with employees and managers to ensure operational needs and coordinate across departments.

Executive Sous Chef

The Four Seasons Resort Hualalai is looking for an Executive Sous Chef. Candidates with a passion for excellence, expertise in hospitality operations and proven leadership experience are invited to apply for a career with Four Seasons. As a member of the Culinary team, the Executive Sous Chef works across disciplines to deliver an exceptional experience.

WHAT YOU’LL DO

• Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen Department through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic operational planning.
• Assist in the planning and development of menus for the hotel, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
• Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
• Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
• Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.
• Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

WHAT TO BRING

• Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card when working in food and beverage
• Three to five years previous experience in a culinary/food & beverage line position, or one to two years in a supervisory or assistant manager position.
• College degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required.
• Successful candidate must possess legal work authorization in United States
