Job summary

Four Seasons Resort Hualālai is seeking a Chef De Cuisine with a passion for excellence to join our culinary team. This leadership role works across disciplines to deliver exceptional guest experiences and maintain the highest kitchen standards.

The position requires expertise in hospitality operations, menu development, and staff mentoring, while coordinating with guests and colleagues to ensure outstanding service at all times.

Qualifications

• Two to three years previous experience in culinary/food & beverage manager positions.
• Hawaii Dept of Health TB clearance required.
• Legally able to work in the United States.

Responsibilities

• Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchen to ensure that established cultural and core standards are met; long-range strategic planning for outlet.
• Assist in planning and development of menus and recipes, ensure correct preparation and presentation, minimize waste.
• Control labor and operating expenses through scheduling, budgeting, purchasing, and inventory control.
• Ensure sanitation standards and cleanliness of the kitchen as set forth by Four Seasons and regulations.
• Maintain control systems for quality and portion consistency; monitor shipments and quality.
• Communicate with staff and managers to coordinate operations; attend meetings and interact with guests to ensure satisfaction.
• In off-peak seasons, drive business creatively with private lunches/dinners and innovative culinary programming.

CHEF DE CUISINE

The Four Seasons Resort Hualalai is looking for a Chef De Cuisine. As a member of the Hualalai Culinary team, the Chef De Cuisine works across disciplines to deliver an exceptional experience.

WHAT YOU’LL DO

• Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchen to ensure that established cultural and core standards are met; long-range strategic planning for outlet.


• Assist in the planning and development of menus and recipes, ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration, utilize creative menu planning to minimize waste.


• Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.


• Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are complying as well as the cleanliness and organization of the kitchen.


• Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.


• Communicate with employees and managers to ensure operational needs are met, coordinate menu tastings and pre-meal meetings to educate staff on food taste and preparation methods, attend regular operational meetings to ensure effective coordination and cooperation between departments; interact directly with guests to ascertain satisfaction.


• In off-peak seasons, drive business creatively. Focus on expanding offers beyond business hours to include private lunches/dinners in member’s homes, creative lunch options to drive covers and to take an innovative approach towards culinary programming.

WHAT TO BRING

• Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card when working in food and beverage


• Two to three years previous experience in culinary/food & beverage manager positions.


• Successful candidate must possess legal work authorization in United States
