Job summary

Morrison Healthcare is seeking an Executive Chef to oversee kitchen operations across Mayo Clinic locations, including Red Wing, Lake City, Cannon Falls, Austin and Albert Lea. You will lead menu planning, ensure quality and safety, and mentor staff in a fast-paced healthcare foodservice environment.

Ideal candidates have 5+ years in culinary management, hands-on kitchen leadership, and a strong understanding of cost controls and patient/client satisfaction.

Qualifications

• AS or equivalent experience
• 5+ years of progressive culinary/kitchen management experience
• High volume, complex foodservice operations experience
• Institutional and batch cooking experience
• Hands-on chef experience is a must
• Knowledge of food trends, production, sanitation, cost controls, and presentation
• Computer skills: Word, Excel, PowerPoint, Outlook, Internet
• Willingness to participate in client satisfaction programs
• ServSafe certification is highly desirable

Responsibilities

• Plans regular and modified menus per established guidelines
• Follows standardized recipes, portioning and presentation standards
• Trains kitchen staff in food prep, safety and sanitation
• Maintains cleaning and maintenance schedules for equipment and areas
• Manages inventory to stay within guidelines
• Decides on leftover food utilization within guidelines
• Complies with health, safety and sanitation regulations
• Participates in departmental meetings and professional programs
