Job summary

Dairy Farmers of America, Inc. is seeking a Cheese Process Operator in California to monitor cooking and molding of cheese curds and collaborate with the lab to meet customer expectations of the cheese product.

You will adjust temperatures, mold cheeses to proper weights and shapes, add smoke flavoring, submit samples for lab testing, and ensure HACCP, GMP, and safety programs are followed in a clean, 5S-friendly environment.

Qualifications

• High School Diploma or GED, preferred but not required
• Must have basic math skills
• Must read, write and speak English
• Must participate in the safety observation program
• Must follow all safety, GMP, CI, and HACCP programs
• Must be able to work safely around chemicals and moving equipment
• Must be able to maintain work area up to 5S standards

Responsibilities

• Monitor and assist with the process of cooking and molding of cheese curds
• Adjust temperatures cheese cook temps as needed for different recipes
• Mold cheese to proper weights and shapes
• Add smoke flavoring to vats as required
• Submit sample for lab testing
• Ensure correct vat separation from the cooker to the brine
• CIP the cooker
• Maintain safe working conditions and compliance with state and federal regulations
• Follow DFA GMP policies and report nonconformities
• Attend required training including Safety, GMP, HACCP, and SQF
• Document all processes accurately
