Job summary

The Madison Concourse Hotel on West Dayton Street, Madison, WI, is seeking a Lead Line Cook with 3+ years of line cook experience. You’ll oversee pantry, sauté and broiler, lead shifts, coach junior staff and ensure top quality and safety on the line, while preparing meals alongside the team.

Starting pay is $25/hour with a typical 2pm-11pm schedule, weekends and holidays required. Benefits and growth opportunities available as part of a full-time, on-site kitchen team.

Qualifications

• 3+ years of line cook experience preferred.
• Strong knowledge of food safety, sanitation and temperature standards.
• Clear, calm communication, even when the board is full.
• Patience and willingness to teach.
• Good judgment and attention to quality.
• High school diploma, GED, or equivalent experience.

Responsibilities

• Prep soups, sauces and specials and contribute daily menu creativity.
• Handle meat and fish fabrication and cook to correct temperatures.
• Accommodate special requests to satisfy guests.
• Coordinate workflow, station coverage and daily priorities with the Chef.
• Coach less experienced cooks on recipes and equipment.
• Maintain standards for quality, safety, sanitation and uniforms.
• Run opening and closing procedures and keep areas clean.
