Job summary

Aviator Nation Dreamland in Malibu is seeking a Prep Cook to support daily kitchen operations by prepping, cooking, and portioning ingredients according to Chef specifications. You will follow standard recipes, maintain a clean station, practice proper food safety, and help with receiving deliveries.

The role requires strong knife skills, organization, and the ability to work calmly under pressure in a fast-paced setting.

Qualifications

• Proficiency in basic cooking techniques and culinary fundamentals.
• Strong knife handling and precision.
• Knowledge of food safety guidelines, sanitation, and health department standards.
• Excellent organizational, time management, and multitasking abilities.

Responsibilities

• Adhere strictly to all standard recipes and quality specifications.
• Wash, peel, cut, and prep all raw produce for kitchen use.
• Trim, portion, and prep all raw proteins according to specifications.
• Prepare, batch, and store all house-made sauces, dressings, and marinades.
• Portion and package food items per specified quantities and order requirements.
• Assist line cooks with station replenishment and support during service.
• Receive, unpack, inspect, and organize incoming supply orders and deliveries.
• Properly label, date, and rotate all prepped ingredients and perishable items in accordance with FIFO guidelines.
