Position Title: Dishwasher/Steward
Reports to: Executive Chef, Executive Sous Chef, Sous Chef
FLSA Status: Hourly, Non-exempt
Job Summary
The Dishwasher/Steward position is responsible for maintaining cleanliness in the kitchen dish area and other Food & Beverage prep areas. This role involves washing and properly storing all cooking utensils, china, flatware, and glassware.
Essential Duties
- Washes all wares using dishwashing machines or by hand, following food safety standards and regulations.
- Polishes silverware, platters, and chafing dishes.
- Collects and disposes of kitchen trash, breaks down boxes, and removes debris.
- Inspects garbage for reusable items like silverware and dishes.
- Washes and polishes stainless steel surfaces and equipment.
- Cleans kitchen areas, including receiving and trash areas.
- Sweeps and mops kitchen floors.
- Stores dishes and wares properly.
- Cleans dish machines and work areas according to schedule.
- Assists in food prep, storage, and cleaning of coolers and storerooms.
- Maintains inventory of cleaning supplies.
- Transfers supplies between storage and work areas.
- Handles china and glassware carefully to prevent breakage.
- Inspects floors regularly to ensure cleanliness and safety.
- Participates in weekly kitchen cleaning and maintenance.
- Stores cleaning equipment properly and uses chemicals safely, aware of MSDS guidelines.
- Supports food servers by prioritizing cleaning service items.
- Adheres to sanitation and personal hygiene standards.
- Performs additional tasks as assigned by culinary management.
Qualifications
- High School diploma or GED.

- Maintains cleanliness and safety standards in the kitchen.
- Knowledge of proper dishwashing and sanitation procedures.
- Ability to work efficiently in a team and in a fast-paced environment.
- Follows directions accurately and promptly.
- Knowledge of emergency procedures and safety protocols.
Certifications
- ServSafe food safety certification preferred.
Physical Requirements
- Ability to move around the kitchen and handle equipment.
- Ability to identify and handle cleaning products safely.
- Occasional lifting up to 50 lbs.
- Exposure to kitchen heat, humidity, and noise.
