Position Purpose
To sort, wash, and return dishes and utensils to food operations throughout the hotel. To maintain a clean and efficient work station. To expedite clean dishes and utensils to the cook line and other areas of Food & Beverage as needed. To maintain and clean kitchen equipment including stovetops, ovens, fryers, mixers, coolers, etc. Responsible for providing associate meals, maintaining cleanliness, and upholding sanitation and hygiene standards.
Essential Functions
- Properly fill and maintain dish machine according to manufacturer's standards and health department guidelines. Receive, rinse, and rack dishes and utensils.
- Unload dish machine, stack, store, and return dishes and utensils to proper kitchen areas.
- Empty garbage cans as needed. Maintain cleanliness of dish area, floors, walls, and counters following resort and health standards. Sweep and mop floors in dish room, walk-in cooler, freezer, and kitchen. Clean and replace floor mats.
- Perform general cleaning tasks using standard hotel cleaning products as assigned to meet health standards.
- Wipe down countertops and prep areas to maintain cleanliness and efficiency.
- Restock areas with supplies such as hand towels, soap, plates, and dishes.
- Handle cleaning chemicals safely, following prescribed standards. Practice good safety habits with chemicals, wet floors, and slip hazards.
- Assist with lifting and moving food carts, storage racks, and other kitchen equipment as directed.
- Stock supplies in the cafeteria.
- Inventory paper items and notify Chef or Sous Chef if supplies are low.
- Prepare hot and cold food items according to menus and recipes.
- Set up hot food and salad bars timely.
- Maintain high quality in food production and presentation.
- Follow food safety and sanitation procedures while performing duties.
- Maintain personal cleanliness, hygiene, and professional appearance.
- Break down and set up stations as needed.
- Follow cafeteria schedule, be ready for service, and remove food as requested.
- Distribute day-old pastries per Chef's instructions.
- Perform other duties as assigned.
Position Requirements
- Ability to tolerate humid and wet work conditions; temperatures may cause discomfort.
- Work in noisy areas with frequent interruptions; ability to switch activities quickly.
- Ability to lift objects up to 75 pounds, push, pull, or transport up to 150 pounds, and carry 50 pounds short distances.
- Remain calm under stress in a fast-paced, noisy, and confined environment.
- Senses of smell, taste, and touch.
- Sensitivity to hot and cold.
- Ability to bend and lift over shoulders.
- Friendly, polite, and able to interact appropriately with others.
- Work independently and efficiently during busy periods.
- Knowledge of equipment and food preferred; no prior experience required, hospitality experience is a plus.
