Noble Steakhouse is an elevated fine-dining steakhouse concept preparing to open its flagship location in Denver, Colorado. We are seeking an experienced, hands‑on Director of Operations who is excited by the opportunity to lead a restaurant from pre‑opening through launch, stabilization, profitable operation, and future expansion.
This is not a position for an operator who wants to lead exclusively from an office. The Director of Operations will be actively involved in the restaurant, working alongside the leadership team and employees to establish the culture, service standards, operating systems, financial discipline, and guest experience that will define Noble Steakhouse.
Following the successful opening and operation of the flagship location, this role will also play an integral part in opening and operating future Noble Steakhouse locations.
The Director of Operations will oversee and take ownership of all aspects of Noble Steakhouse's day-to-day operations. This individual will be responsible for building and leading a high‑performing team while ensuring the restaurant consistently delivers exceptional hospitality, strong financial results, operational excellence, and the elevated standards expected of a fine‑dining steakhouse.
The ideal candidate has significant leadership experience within successful fine‑dining and steakhouse operations and understands both the hospitality and business sides of operating a high‑volume, premium restaurant.
Lead the pre‑opening and opening process for Noble Steakhouse alongside ownership, culinary leadership, and the opening team.
Oversee all aspects of restaurant operations and assume ownership of the restaurant's overall operational performance.
Recruit, develop, coach, and retain a high‑performing management and hourly team.
Establish and maintain exceptional fine‑dining service and hospitality standards.
Be highly visible and hands‑on in the restaurant, particularly during peak business periods, special events, training, and the opening period.
Build a culture of accountability, professionalism, hospitality, teamwork, and continuous improvement.
Oversee FOH operations while partnering closely with culinary leadership to ensure cohesive execution throughout the restaurant.
Maintain exceptional standards for food, beverage, service, atmosphere, cleanliness, presentation, and overall guest experience.
Own and manage restaurant financial performance, including revenue, labor, cost of goods, operating expenses, budgets, forecasting, and profitability.
Analyze financial and operational results and implement action plans when performance is not meeting expectations.
Drive sales, guest satisfaction, repeat business, and overall restaurant profitability.
Establish and enforce operating procedures, training standards, service standards, opening and closing procedures, and management accountability.
Oversee scheduling and labor management to ensure appropriate staffing while maintaining financial discipline.
Partner with culinary, beverage, marketing, finance, HR, and other support functions to successfully operate and grow the concept.
Ensure compliance with applicable health, safety, employment, liquor, and operational requirements.
Oversee inventory controls, purchasing practices, vendor relationships, and loss prevention.
Develop management talent and succession plans as the Noble Steakhouse concept grows.
Assist in documenting and refining systems and standards that can be replicated at future Noble Steakhouse locations.
Participate in site openings, hiring, training, and operational setup for future Noble Steakhouse locations.
Take on additional responsibilities necessary to successfully operate and grow Noble Steakhouse.
Significant restaurant leadership experience in fine dining is required.
Steakhouse leadership experience is required.
Proven experience leading a high‑performing restaurant operation at the General Manager, Director of Operations, Regional, or comparable senior leadership level.
New restaurant opening experience strongly preferred.
Strong understanding of premium food and beverage operations and elevated service standards.
Demonstrated ability to manage restaurant financials, budgets, labor, cost controls, forecasting, and profitability.
Proven ability to recruit, train, motivate, develop, and hold teams accountable.
Strong leadership presence with the ability to work effectively alongside both management and hourly employees.
Excellent communication, organization, decision‑making, and problem‑solving skills.
Ability and willingness to work a schedule appropriate for a senior restaurant operator, including nights, weekends, holidays, and peak business periods as required.
Willingness and ability to travel as needed for future Noble Steakhouse openings.
Must be comfortable working in a fast‑paced, high‑expectation opening environment.
