This role involves planning, organizing, developing, and directing the overall operation of the Dietary Department, ensuring compliance with federal, state, and local regulations, and following directives from the Administrator. The supervisor is responsible for maintaining a clean, safe, and sanitary environment and providing nutritionally adequate meals according to regulatory guidelines.

KEY RESPONSIBILITIES:
  1. Interview patients and their families to gather information about food preferences, diet history, and nutritional needs.
  2. Complete clinical documentation related to nutritional assessments and care plans, ensuring regulatory compliance.
  3. Prepare for visits from Registered Dietitians and adhere to recommendations and policies.
  4. Review and ensure proper serving of regular and therapeutic diet orders as prescribed and according to the menu.
  5. Document patients' cultural backgrounds that may influence food consumption.
  6. Monitor and document freezer/refrigerator temperatures as per procedures.
  7. Conduct inventory, purchase food and supplies, and monitor receipt for compliance with standards.
  8. Ensure proper storage, preparation, and serving of food under sanitary conditions, complying with regulations.
  9. Supervise tray line service and conduct tray audits to ensure proper service.
  10. Follow procedures for serving partner meals in accordance with policies.
  11. Supervise cleaning of all kitchen equipment, including carts, tables, counters, and appliances.
  12. Oversee operation of major kitchen equipment such as dishwashers, mixers, ovens, and steamers.
  13. Monitor food production to maintain nutritional value and regulatory compliance.
  14. Manage budgetary guidelines as per company policies.
  15. MINIMUM EDUCATION:

    High school diploma or equivalent.

    MINIMUM EXPERIENCE:

    At least two years of supervisory experience in a skilled nursing, hospital, or related medical center.

    MINIMUM LICENSURE/CERTIFICATION:

    Certification in an accredited dietetic training course approved by the Association of Nutrition and Foodservice Professionals or the Academy of Nutrition and Dietetics.

    ADDITIONAL QUALIFICATIONS (Preferred):

    Customer service orientation, training in cost control, food management, diet therapy, and basic computer skills.
