Job Purpose:

Plans, organizes, develops, and directs the overall operation of the Dietary Department in accordance with current federal, state, and local regulations, as well as directives from the Administrator. Responsible for maintaining a clean, safe, and sanitary Dietary Department and providing nutritionally adequate meals following regulatory guidelines.

Key Responsibilities:

  1. Interview patients and their families to gather information on food preferences, habits, diet history, and other pertinent nutritional data.
  2. Complete appropriate clinical documentation related to patients' nutritional needs in the medical records, in line with comprehensive assessments and care plans, to ensure regulatory compliance.
  3. Prepare for visits from Registered Dietitians and adhere to recommendations as outlined in company policies and procedures.
  4. Review regular and therapeutic diet orders to ensure accurate service as prescribed and according to the menu.
  5. Document patients' cultural backgrounds that may influence food choices.
  6. Monitor freezer and refrigerator temperatures following established procedures and maintain proper documentation.
  7. Conduct inventory, purchase food and supplies, and monitor receipts for compliance with organizational standards and regulatory guidelines.
  8. Maintain proper storage, preparation, distribution, and serving of food under sanitary conditions, adhering to regulatory standards.
  9. Supervise tray line service and conduct tray audits to ensure compliance with prescriptions and guidelines.
  10. Follow procedures for serving partner meals in accordance with company policies.
  11. Supervise cleaning procedures for all kitchen equipment, including carts, tables, counters, and appliances such as ice machines, blenders, mixers, and ovens.
  12. Oversee operation of major equipment like dishwashers, garbage disposals, and cooking appliances.
  13. Monitor food production to ensure meals retain their nutritive value and comply with regulations.
  14. Maintain compliance with budgetary guidelines as per company policies.

Qualifications:

Minimum Education: High school diploma or equivalent.

Minimum Experience: Two (2) years in a supervisory role within a skilled nursing care center, hospital, or related medical facility.

Licensure/Certification: Certification in an accredited dietetic training program approved by the Association of Nutrition and Foodservice Professionals and/or the Academy of Nutrition and Dietetics.

Additional Qualifications (Preferred): Customer service orientation, training in cost control, food management, diet therapy, and basic computer skills.
