Job Description - Dietary Manager Salaried HCC (2506376)

Job Purpose:

Plans, organizes, develops, and directs the overall operation of the Dietary Department in accordance with current federal, state, and local regulations, as well as directives from the Administrator. Responsible for maintaining a clean, safe, and sanitary Dietary Department and providing nutritionally adequate meals in compliance with regulatory guidelines.

Key Responsibilities:

  1. Interview patients and their families to gather food preferences, habits, diet history, and other pertinent nutritional information.
  2. Complete appropriate clinical documentation in the medical record regarding patients' nutritional needs, aligned with comprehensive assessments and care plans to meet regulatory standards.
  3. Prepare for visits from Registered Dietitians and adhere to their recommendations as outlined in company policies and procedures.
  4. Review regular and therapeutic diet orders to ensure accurate service as prescribed and according to the menu.
  5. Document patients' cultural backgrounds that may influence food consumption.
  6. Monitor freezer and refrigerator temperatures following established procedures, maintaining proper documentation.
  7. Conduct inventory, purchase food and supplies, and monitor receipts for compliance with organizational standards and regulations.
  8. Ensure proper storage, preparation, distribution, and serving of food under sanitary conditions, complying with regulatory guidelines.
  9. Supervise tray line service and conduct tray audits to ensure meals are served as prescribed and compliant with regulations.
  10. Follow procedures for serving partner meals, ensuring adherence to company policies.
  11. Supervise cleaning procedures for all kitchen equipment, including carts, tables, counters, and appliances.
  12. Oversee operation of major kitchen equipment such as dishwashers, fryers, ovens, and steamers.
  13. Monitor food production to ensure meals retain nutritional value and meet regulatory standards.
  14. Maintain compliance with budgetary guidelines as per company policies.

Minimum Qualifications:

  • High school diploma or equivalent.
  • Two (2) years of supervisory experience in a skilled nursing care center, hospital, or related medical facility.
  • Certification in an accredited dietetic training course approved by the Association of Nutrition and Foodservice Professionals or the Academy of Nutrition and Dietetics.

Preferred Qualifications:

  • Customer service orientation.
  • Training in cost control, food management, diet therapy, and basic computer skills.
