Position Summary:
The Dietary Manager is responsible for providing nourishing food to residents, guests, and employees under sanitary conditions as directed and in accordance with established policies and procedures. They ensure meals are prepared according to menus and in compliance with Federal and State regulations. The Dietary Manager plans menus in consultation with a dietitian, considering seasonal and local food availability.
Principal Duties and Responsibilities:
- Maintain and review policies and procedures for Food and Nutrition services.
- Plan regular and therapeutic diet menus with consultation from a Registered Dietitian.
- Test, standardize, and supervise recipes and portion control.
- Calculate therapeutic diets as ordered by physicians and provide nutritional supplements and snacks to meet individual needs.
- Assist in preparing and managing the annual budget for Food and Nutrition Services. Review monthly cost analysis reports. Take inventory and purchase food and supplies within budget standards. Inspect received purchases for accuracy.
- Ensure safety and sanitation standards through regular environmental and sanitation rounds of kitchens and dining areas. Report repairs needed.
- Participate in surveys by regulatory agencies and stay updated on regulations affecting food handling and operations to ensure compliance.
- Maintain records of menus, food usage, meal census, and nutritional intervention plans.
- Conduct assessments with patients to determine dietary needs and preferences, and develop nutritional plans.
- Gather feedback through surveys on menus and meal service, and address complaints.
- Attend departmental and staff meetings, QAPI meetings, and patient care conferences.
- Coordinate with dietary consultants for advice and care planning.
- Assist in planning and executing special events requiring snacks or refreshments.
- Maintain confidentiality in accordance with HIPAA guidelines.
- Practice good hygiene and adhere to uniform policies. Wear hairnets or caps in food service areas.
- Perform other duties as assigned.
Qualifications:
- Certified Dietary Manager.
- One year of management experience preferred.
Skills and Knowledge:
- Understanding of all phases of dietary services, management principles, supervision, and budgeting.
- Knowledge of Michigan and other relevant health care regulations.
- Effective communication, problem analysis, and leadership skills.
- Basic computer skills required.
Other Requirements:
- Manual dexterity for operating office equipment.
- Ability to travel as needed.
