Dietary Cook | Summit Healthcare Mgmt | Charleston, West Virginia

About the Job:

The Cook implements menus, coordinates food preparation, and serves meals. Responsibilities include ordering, inventory management, and preparing food items for patients, staff, and visitors, ensuring appealing, nutritious, and high-quality meals and snacks. Activities are performed in accordance with menus, food service policies, sanitary guidelines, and food allergy requirements. Proper cleaning of the kitchen and service areas, adhering to infection control procedures, is also required.

Roles and Responsibilities:
  • Plans and prepares foods according to facility policies, dietary guidelines, and recipes provided by supervisors or dietitians.
  • Schedules cooking activities to ensure all foods for regular and therapeutic menus, as well as special functions, are prepared and ready on time.
  • Follows recipes and portioning procedures to prepare meats, entrees, gravies, casseroles, vegetables, soups, salads, and desserts.
  • Ensures food safety by maintaining temperature logs, proper storage, stock rotation, labeling, and discarding expired food.
  • Sets up steam tables to be attractive and easy to serve, labeling food as needed.
  • Prepares leftovers for storage, ensuring proper labeling and dating, and assists with cleaning steam tables and pans.
  • Supervises staff involved in meal preparation and service.
  • Uses culinary techniques suited for special or restrictive diets.
  • Monitors serving lines and may serve foods during service to ensure availability and replenishment.
  • Records temperature checks and meal counts daily.
  • Maintains cleanliness and order in the kitchen, including trash disposal.
  • Inspects and cleans equipment and work areas regularly.
  • Manages inventory, checks deliveries, and assists with storage of supplies and food.
  • Applies appropriate culinary techniques for special dietary needs.
Minimum Qualifications:
  • High school diploma or equivalent.
  • At least two years of experience in food service, preferably in institutional settings.
  • SERV Safe or similar food safety certification, as required by state or facility.
