Job summary

Grand Canyon Railway & Hotel seeks a Food & Beverage Director to provide strategic and operational leadership across all F&B operations, including Fred Harvey Restaurant, Spenser’s Pub, and banquet/catering services. You will drive financial performance, guest satisfaction, and team development in a dynamic, destination-focused environment.

The role includes managing a 40-hour schedule with additional hours as needed, leading a large team, and upholding company standards and certification

Qualifications

• Five years of progressive management experience in large-scale, high-volume restaurant, resort, hotel, or multi-outlet F&B operations.
• Demonstrated experience leading managers and supervisors in both front-of-house and back-of-house operations.
• Experience analyzing P&L statements, labor, costs, forecasts, and operating plans.
• Proven ability to improve financial performance, guest satisfaction, service, and team capability.
• Proficiency with Microsoft Office and learning company systems.

Responsibilities

• Lead development and execution of annual F&B operating plan, budget, forecasts, capex priorities, and performance targets.
• Own departmental financial performance including revenue, labor, cost of goods, and EBITDA results.
• Identify revenue-growth opportunities across restaurant, pub, banquets, catering, and events.
• Ensure standards of quality, presentation, service, cleanliness, and hospitality across venues.
• Recruit, onboard, coach, and retain a strong team of leaders and hourly staff.
• Collaborate with Sales/Marketing to maximize group, banquet, and event revenue.
