Job summary

The Little Nell invites a Culinary/Pastry Extern to participate in their university externship program designed to enhance food product knowledge and overall understanding of the F&B operation. Trainees will rotate through Element 47, Ajax Tavern, Banquets, and Aspen Mountain Club under the Executive Sous Chef’s direction.

Applicants should be enrolled in a hospitality/culinary program, with at least 6 months in hospitality or related fields, and must be available for a 6-hour orientation and

Qualifications

• Must be an enrolled student seeking internship for class credit from a university.
• Minimum 6 months of work experience in hospitality, restaurants or related field.

Responsibilities

• Rotate through stations within the culinary department as assigned by supervision.
• Label products and maintain cleanliness of walk-in coolers and freezers.
• Practice FIFO and sanitation procedures; adhere to policies for F&B and culinary departments.
• Work overtime hours as needed and may rotate to other culinary departments.
• Complete mise en place sheets daily and maintain station cleanliness.

Education
