Trail Drive Management Corp. – Dickies Arena of Fort Worth, TX

Dickies Arena is a 14,000 seat, multipurpose venue located adjacent to the Will Rogers Memorial Center campus in Fort Worth, Texas. Owned by the City of Fort Worth and managed by Trail Drive Management Corp (TDMC), it opened in November 2019 and hosts concerts, sporting events, and family entertainment, including Fort Worth Stock Show rodeo performances.

Reports to: Culinary Leadership Team

Job Description

A culinary Lead Cook supports kitchen operations by assisting the culinary management team with staff oversight. Responsibilities include maintaining inventory, controlling orders, ensuring adherence to procedures, standards, and recipes, and maintaining hospitality, food quality, and sanitation standards. Hours vary based on arena events. This position reports to the culinary management team.

Essential Functions
  • Supervise kitchen staff; ensure compliance with recipes, production sheets, and efficiency standards.
  • Be familiar with menu items, cooking methods, and presentation standards.
  • Follow and demonstrate recipes; train team members.
  • Complete daily logs for each station.
  • Ensure proper food labeling, dating, and FIFO rotation.
  • Report incidents promptly.
  • Assist in training and evaluating staff.
  • Support inventory and order management.
  • Engage with guests and team members to ensure excellent hospitality.
  • Collaborate with F&B leadership for smooth operations.
  • Perform other duties as assigned.

Physical Demands

Additional Eligibility Qualifications
  • Must be 18+ years old
  • 1-2 years leadership in hospitality preferred
  • Proficient in Microsoft Office
  • Excellent cooking skills
  • Ability to operate all kitchen equipment
  • Experience with food costing and controls
  • Organizational and multitasking skills
  • Knowledge of health codes
  • Interpersonal and communication skills
  • Ability to lift and work flexible hours, including nights, weekends, and holidays
