Culinary J1 Trainee – 12-Month Training Program

The Sea Pines Resort

Program Overview:

The Sea Pines Resort is offering a comprehensive 12-month Culinary J1 Training Program designed to provide hands‑on experience in resort‑style food and beverage operations. This structured program develops foundational culinary skills, exposes trainees to diverse cuisines, and builds leadership capabilities in a dynamic hospitality environment.


Program Structure & Key Learning Areas:

Phase 1: Orientation (Month 1)


  • Introduction to resort culinary operations, including restaurants, bars, and catering

  • Overview of buffet service, poolside dining, and event operations

  • Training on kitchen layout, equipment, safety protocols, and sanitation standards

  • Familiarization with company policies, guest service expectations, and team dynamics


Phase 2: Culinary Fundamentals (Months 2–4)


  • Hands‑on training in basic cooking techniques including knife skills, sautéing, grilling, and baking

  • Preparation of foundational recipes such as sauces, stocks, and dressings

  • Introduction to menu development, seasonal planning, and cost control

  • Training in food presentation, plating, and garnishing with a focus on quality and consistency

  • Exposure to international cuisines such as Mediterranean, Asian, and Latin American

  • Hands‑on preparation of specialty and signature dishes

  • Training in banquet and catering operations for weddings, conferences, and large‑scale events

  • Experience in event setup, execution, and coordination


Phase 4: Advanced Skills & Leadership (Months 9–12)


  • Training in advanced culinary techniques, including modern cooking methods and innovation

  • Exploration of culinary trends and creative recipe development

  • Introduction to kitchen management, including inventory, scheduling, and budgeting

  • Development of leadership, communication, and team supervision skills
