Job summary

Qualifications

• Must be over 18 years of age.
• Minimum of one (1) year of food prep or related work preferred.
• Previous supervisory experience preferred.
• Previous experience interacting with inmates a plus.
• Ability to motivate and supervise inmates and/or team members to attain quality and quantity of food production in a correctional work environment.
• Must be able to obtain a food safety certification.
• Ability to work independently with limited supervision.
• Ability to exercise good judgment and tact.
• Must be able to follow basic safety procedures and policies.
• Must qualify for and maintain correctional facility security clearance.

Responsibilities

• Review and approve production and temperature logs to follow Aramark guidelines.
• Supervise inmates in food preparation and tray assembly.
• Ensure timely, efficient meal service and adherence to Aramark guidelines.
• Participate in preparation and serving of meals.
• Print and distribute recipes.
• Direct inmates in using Aramark recipes and train on cooking procedures.
• Ensure proper portions and accommodate dietary requirements.
• Obtain accurate daily population counts and review with staff.
• Adhere to security policies; secure storage areas.
• Ensure kitchen tools/equipment are returned to secure area.
• Prepare work and sanitation schedules; supervise cooks and inmates accordingly.
• Assist in inventory and food receiving; request orders as needed.
• Participate in meal production process and postproduction steps.
• Follow HACCP procedures for proper food handling.
