Job summary

Alabama Department of Corrections seeks a Food Service Specialist to oversee a centralized food service program, coordinating with the vendor to ensure proper standards, sanitation, and delivery of inmate meals. Qualifications

• Knowledge of modern methods and equipment for large-scale food preparation.
• Knowledge of institutional food service management, nutrition values, costs and inventory controls.
• Knowledge of health, sanitation, and safety requirements in storage, prep and service.
• Ability to calculate food costs, inventory levels, re-order levels, and dietary values.
• Ability to plan food materials for large inmate populations.

Responsibilities

• Communicate with food service provider management and other agencies to ensure information is accurately received and implemented.
• Conduct monthly and occasional inspections to verify sanitation, temperature control, equipment use, and contract compliance.
• Inspect kitchens and equipment; report malfunctions to appropriate personnel.
• Prepare reports for the food service vendor and manager with recommended action plans.
• Conduct weekly check-ins with food service managers to ensure proper operations and address challenges.
• Monitor staffing levels to ensure adequate kitchen operations and service delivery.
• Review production worksheets, temperature logs and consumption reports for compliance.
• Provide guidance to staff to ensure adherence to safety standards and contractual guidelines.
• Advise the Food Service Contract Manager on food-service matters; participate in training activities.
