Qualifications

• Must be over 18 years of age.
• Minimum of one year of food prep or related work preferred.
• Previous supervisory experience preferred.
• Previous experience interacting with inmates is a plus.
• Ability to motivate and supervise inmates to attain quality food production in a correctional setting.
• Must be able to obtain a food safety certification.
• Ability to work independently with limited supervision.
• Must qualify for and maintain correctional facility security clearance.

Responsibilities

• Supervise inmates in food preparation and tray assembly.
• Ensure meals are served timely and according to guidelines.
• Train workers in duties and coordinate tasks to improve efficiency.
• Adhere to HACCP policies and proper food handling procedures.
• Maintain sanitation and safety standards in the facility.
• Review production and temperature logs and approve adherence.
• Direct inmates in using recipes and proper cooking procedures.
• Ensure proper portions and accommodation of dietary requirements.
• Obtain daily population counts and report to staff.
• Secure storage areas and ensure keys are returned.
• Prepare schedules and sanitation timelines for cooks and staff.
• Assist with inventory, receiving, and storage of food items.
