Job summary

Loews Sapphire Falls Resort in Orlando seeks a Pastry Supervisor to lead a high-volume pastry program, craft desserts, and drive culinary excellence. You will partner with the Pastry Chef to maintain quality, inspire innovation, and deliver memorable guest experiences across events and services.

You are a hands-on leader with culinary expertise, organized operations, and a collaborative approach to manage a pastry team and schedules effectively.

Qualifications

  • 7+ years as a working pastry supervisor in a high-volume upscale hotel or freestanding restaurant operation with banquet facilities.
  • Thorough knowledge of Food Service Sanitation Standards and high-quality pastry preparation.
  • Experience with professional pastry equipment and restaurant operations.

Responsibilities

  • Oversee the preparation and presentation of all pastries, desserts, and baked goods.
  • Enforce recipes, portion control, and consistency standards.
  • Collaborate with the Pastry Chef to develop new items and seasonal menus.
  • Supervise, train, and mentor pastry team members to maintain high performance.
  • Conduct pre-shift briefings and provide ongoing feedback and coaching.
  • Create schedules that ensure optimal staffing during peak periods.
  • Monitor inventory and coordinate ordering to maintain freshness and minimize waste.
  • Ensure compliance with health, safety, and sanitation standards.

What We're Looking For

A passionate and detail-oriented Pastry Supervisor who will bring creativity, precision, and leadership to our pastry kitchen. You'll be the driving force behind exceptional desserts and baked goods, ensuring every creation meets the highest standards of quality and artistry. In this role, you'll partner with the Pastry Chef to maintain consistency, inspire innovation, and deliver memorable experiences for every guest.

What You'll Do
  • Oversee the preparation and presentation of all pastries, desserts, and baked goods

  • Monitor inventory and coordinate ordering to maintain freshness and minimize waste
  • Ensure compliance with health, safety, and sanitation standards
  • Maintain accurate records of production, waste, and food costs
  • Fulfill special dietary requests and custom dessert orders
  • Monitor guest feedback and collaborate on improvements
  • Work closely with other kitchen departments to support events and services
  • Report equipment maintenance needs promptly
  • Regular attendance in conformance with standards
  • May be required to work varying schedules to reflect business needs
  • Required to attend all mandatory training sessions and meetings
  • Perform other duties as assigned
Your Qualifications Include
  • 7+ years as a working pastry supervisor in a high-volume upscale hotel or freestanding
  • restaurant operation with banquet facilities required.
  • Thorough knowledge and understanding of Food Service Sanitation Standards.
  • Exceptional knowledge of high quality, upscale pastry and dessert preparation and presentation.
  • Experienced in ingredients, techniques, and operating Mixers (Fondant, Dough, etc.), Proofing Cabinets, Dough Sheeters and Dividers, Dough Proofers, Convection Ovens, and Walk-in Coolers.
  • Ability to create artistically and aesthetically appealing pastries and desserts.
  • Baking & Pastry/Culinary degree or equivalent formal training preferred.
  • Strong organizational skills.
  • Excellent guest service skills.
  • Ability to regularly push, pull, lift up to 50 lbs
  • Ability to communicate effectively in English verbally and written with team members, leaders and guests required.
  • Must be able to work a flexible schedule, nights, weekends and holidays as required.
