The US Bureau of Prisons/Federal Prison System is seeking a cook supervisor to independently prepare all foods for regular and modified diets according to standardized recipes. You will plan meals, adjust procedures as needed, and ensure accurate portions for all meals.

Knowledge of large-scale cooking and special diet requirements (high protein, low fat, sodium-restricted, etc.) is essential. A Food Protection Manager Certification is required; exceptions apply to current BOP employees in

• Must meet Barely Acceptable level on screen-out elements (Ability to supervise) and (Aptitude for work with prisoners).
• Must provide detailed information on resume to support assessment responses.

Responsabilidades

• Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus.
• Prepare, cook, season, and portion food for all meals by following standardized recipes.
• Plan and prepare or coordinate the preparation of entire meals.
• Make substitutions and adjustments in food preparation procedures and seasoning.
