Job summary

Kanpai Bar and Lounge is seeking a skilled Sushi Cook to prepare and present sushi and sashimi in a luxury hotel setting. You will help maintain spotless work areas and adhere to health standards while contributing to evolving menu offerings.

Two years of sushi cooking experience, precise knife skills, and fluency in English are required. Flexibility for weekends and holidays is essential to support high-volume service.

Qualifications

Qualifications

The position is responsible for preparing, organizing mise-en-place, and executing all sushi and sashimi dishes. Candidate will be responsible for the cleanliness and sanitation of the work areas and equipment in accordance with Health Department standards.

Kanpai Bar and Lounge is open for dinner.

Essential Functions

• Requires two years Sushi Cook experience, preferably in a high volume, luxury hotel/restaurant.
• Accurate knife skills, and the ability to read and follow recipes and communicate and interact with fellow employees and guests in English.
• This position reports directly to the Restaurant Chef.
• This position will be directly involved in developing the sushi offerings and must have cooking skills and acumen.
• Maintain safety and cleanliness of work area
• Inform Restaurant Chef of deficiencies in stock or quality
• Interact in courteous and professional manner with guests and hotel staff
• Decrease risk of food spoilage through proper rotation of food stock, proper storage of food before and after use, and proper chilling of items used.
• Must be able to work with many types of personalities with professionalism.
• Strong organizational and analytical skills with attention to detail while handling several tasks and responsibilities simultaneously.
• Ability to lift at least 25 LBS
• Ability to stand, reach, push, pull, twist, turn and grasp
• Interpret and comply with a variety of instructions furnished in written, oral, and diagrammatic or schedule form
• Must be available to work any shift including weekends and holidays
