Four Seasons Hotel at The Surf Club in Surfside, FL is seeking an experienced line cook specialized in sushi and seafood for full-time work on site. You will prepare sushi, sashimi, nigiri, and rolls to Four Seasons quality and maintain high standards of seafood handling, food safety, and presentation.

The role requires working all stations (grill, sauté, cold line) with consistency, following recipes, and ensuring mise en place for breakfast, lunch, and dinner service.

Formación

• High school education or culinary training required or equivalent experience.
• Minimum three years culinary experience.
• Proficient knife skills and ability to multi-task.

Responsabilidades

• Prepare sushi, sashimi, nigiri, specialty rolls, and other dishes while maintaining seafood handling, food safety, and presentation standards.
• Work all stations on the line (grill, sauté, cold line) and follow recipes, production, portion, and presentation standards.
• Complete mis en place and set up station for breakfast, lunch, and/or dinner service; manage temperature of meat and fish.
• Operate and clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and grill.

About the role:

Prepare and present sushi, sashimi, rolls, and other dishes according to guest orders and Four Seasons quality standards. Maintain the highest levels of food quality, consistency, freshness, and sanitation while supporting a safe and organized kitchen environment.

What you will do:

• Prepare sushi, sashimi, nigiri, specialty rolls, and other dishes while maintaining proper seafood handling, food safety, and presentation standards.


• Work all stations on the line (grill, sauté, cold line). Prepare food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for breakfast, lunch, and/or dinner service.Manages the temperature of meat and fish.


• Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs. Scales recipes to the gram.


• Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.

What you bring:

• High school education, cooking school, culinary institute education or equivalent experience.


• Minimum three-years culinary experience.Intermediate culinary knowledge is expected for this position.


• Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill.


• Proficient knife skills and ability to multi-task.


• Previous sushi experience preferred.
