Four Seasons Hotel One Dalton Street Boston is seeking a Cook 1 to join its Culinary team. The role requires passion for hospitality, strong attention to detail, and the ability to work weekends, nights, and holidays.

You will prepare quality items, set up stations, and maintain equipment in a luxury hotel environment. The position is based in Back Bay, Boston, with access to The Wellness Floor and multiple dining outlets.

Qualifications

• Requires reading, writing and oral proficiency in English.
• High school education or culinary school preferred.
• Minimum two years culinary or related work experience.
• Proficient knife skills and ability to multi-task.

Responsibilities

• Prepare consistent quality food and pastry items according to guest orders following recipe cards and production, portion, and presentation standards.
• Complete set-up station for breakfast, lunch, and/or dinner service.
• Start food items that are prepared ahead of time, avoiding over-preparation.
• Operate, maintain and clean kitchen equipment including deep fryer, broiler, stove, steamer, and more.
• Rotate perishables and date items; ensure proper temperatures and stock.
• Assist in planning to correct food cost problems and reduce waste.

The Opportunity

We are seeking individuals who are passionate about hospitality and possess a keen attention to detail to join our Culinary team as a Cook 1!

Essential Function Of The Job

• Ability to work, weekend, nights and holidays.
• Prepare consistent quality food and pastry items according to guest orders following recipe cards and production, portion, and presentation standards.
• Complete set-up station for breakfast, lunch, and/or dinner service.
• Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs.
• Operate, maintain and properly clean kitchen equipment, including but not limited to deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
• Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures.
• Check pars for shift use, determine necessary preparation, freezer pull, and line set up; note any out-of-stock items or possible shortages.
• Return all food items not used to designated storage areas, being sure to cover/date all perishables.
• Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and usage per policies.

Knowledge And Skills

• Requires reading, writing and oral proficiency in the English language.
• Education: High School education, cooking school or culinary institute education preferred.
• Experience: Minimum two years culinary or related work experience. Culinary knowledge is expected for this position.
• Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle iron, flat top grill. Proficient knife skills and ability to multi-task.
