Job summary

Irving Knight Group is seeking an Applications Scientist for confectionery in Illinois to lead the development of innovative confectionery applications, supporting customer initiatives and revenue growth. Qualifications

• Bachelor’s degree in Food Science, Confectionery Science, Culinary Science, Chemistry, Chemical Engineering, or related field.
• Minimum 3 years confectionery product development or applications experience.
• Experience with gummies, licorice, chocolate and related confectionery systems.
• Support labeling and regulatory compliance initiatives.
• Ability to scale up from bench-top to commercial manufacturing.
• Strong MS Office skills and willingness to learn new software.
• Strong communication, organization and interpersonal skills.
• Ability to work independently and within cross-functional teams.

Responsibilities

• Lead confectionery applications development for customer presentations and demos.
• Serve as a technical liaison on formulation, processing, labeling, and regulatory needs.
• Develop and optimize gummies, chocolates, coatings, and candy formulations.
• Lead pilot trials and on-site scale-up and commercialization activities.
• Collaborate with Flavor Development, Sales, Marketing, Regulatory, QA, Operations, and Commercialization teams.
• Travel up to 25% domestically for customer visits and trials.
• Maintain detailed records and conduct sensory evaluations.
