Job summary

JAPANMART in Arcadia, CA is seeking an experienced Chief Sushi Chef to lead the sushi and kitchen sections. You will oversee daily operations, ensure authentic quality, food safety, and customer satisfaction, and collaborate with store management and Japan-based partners.

The role includes staff hiring/training, pre-opening kitchen leadership, and menu development with cost awareness to support profitability.

Qualifications

• Minimum 5 years of professional sushi chef experience, including 2+ years in a leadership role.
• Experience working at a grocery store sushi section.
• Expert-level knowledge of traditional Japanese sushi techniques and knife skills.
• Basic understanding of financial concepts, including the ability to read P&L reports.
• Knowledge of inventory control practices, including PAR systems.

Responsibilities

• Oversee all sushi and kitchen daily preparation and service operations.
• Maintain high standards of quality, freshness, presentation, and flavor across all offerings.
• Hire, train, schedule, and supervise sushi and kitchen staff; develop team skills.
• Lead pre-opening kitchen setup, vendor selection, and cross-department coordination.
