Target Hospitality seeks a Chef I to support high-volume lodge kitchens in the Permian Basin. The role involves preparing and serving meals to HACCP standards, operating a variety of kitchen equipment, and maintaining safety practices across the shift schedule.

Responsibilities include line cooking, food safety adherence, proper storage and rotation, and delivering top-tier guest service while following company policies and safety procedures.

Qualifications

  • 1+ years culinary experience, preferably in remote camp or hospitality.
  • Must communicate effectively in English, both written and spoken.
  • ServSafe certification required; first aid certification is an asset.

Responsibilities

  • Maintain safety culture, follow SOPs and policies.
  • Safely operate kitchen equipment (grills, slicers, tilt skillets, fryers, ovens).
  • Prepare meals on the line and ensure HACCP compliance.
  • Serve guests; monitor meal scans and portion control.
  • Store food properly; rotate and discard expired items per HACCP/FIFO.
  • Provide world-class customer service and assist with duties as needed.

Description

Job Title: Chef I
Reports to: Head Chef
Level: Hourly
Schedule: 6 weeks on / 2 weeks off rotation, or as per manager's discretion and business needs

SCOPE

Responsible for serving guests and assisting with production of the daily menu, preparing and serving meals to HACCP and food safety standards in a high-volume lodge kitchen.

PRIMARY RESPONSIBILITIES

  • Accountable and responsible for maintaining a safety culture, following all SOPs, JSAs, and policies and procedures as set out by Target Hospitality.
  • Must be able to safely operate kitchen equipment, including but not limited to grills, slicers, tilt skillets, deep fryers, and convection ovens.
  • Prepare meals on the line, grill, oven, and fryers.
  • Serve guests and check for meal scans.
  • Serve all foods in accordance with HACCP and food safety standards.
  • Proper food storage, rotation, and discarding of expired food in accordance with HACCP and FIFO guidelines.
  • Ensure proper utensils are used for serving, portion control, and sanitation purposes.
  • Exceed our guests’ needs by providing world‑class customer service.
  • Attend all safety meetings and participate in Target Hospitality emergency response procedures.
  • Additional duties may be assigned by a supervisor or manager.

PHYSICAL DEMANDS

  • Stand for long periods of time, up to 12 hours or longer, with scheduled breaks.
  • Short- and long-distance walking required.
  • Use of stairs and step stools.
  • Use force when pushing and pulling carts that weigh on average 50 lbs.
  • Frequently lift an average weight of 25 lbs with a maximum of 50 lbs. Where weights may exceed 50 lbs, the assistance of another person or a lifting aid is mandatory.
  • Frequently reach below waist, waist to shoulder, and above shoulder, with frequent neck, back, and torso twisting from left to right without restriction.
  • Perform repetitive movements at the wrist, including side to side and up or down, and multiple grasps of an average of 10 lbs with a maximum of 25 lbs.
  • Simple, power, and fine finger manipulation for the duration of an average 12‑hour shift.

WORKING CONDITIONS AND ENVIRONMENT

  • Ability to hear and understand verbal instruction as well as other sounds such as safety alarms and signals.
  • Must be able to see without impairment for inspection purposes, and able to read small text such as product warning labels.
  • Exposure to extreme hot and cold environments.
  • Ability to work within a rotational schedule of 6 weeks on and 2 weeks off, or as per manager’s discretion and business needs.
  • Ability to work safely and navigate within small, close quarters and congested areas.
  • May be exposed periodically to elevated noise and surroundings.

QUALIFICATIONS

  • 1+ years culinary experience, preferably in a remote camp or the hotel/hospitality industry, or equivalent.
  • Ability to communicate effectively, both written and orally, in English.
  • Must have a valid ServSafe certification.
  • First aid certification is an asset.
  • Ability to work within a team environment.
  • Must be able to work effectively and efficiently with or without supervision.
  • Strong prioritization and time management skills.
  • Ability and willingness to travel and work long rotations away from home.
  • Must be able to pass a background check and urinalysis.
  • Must provide your own transportation to and from the facility.
