We are seeking a talented and driven Chef de Partie to join our Culinary Team. This position is responsible for overseeing designated kitchen stations, maintaining culinary excellence, supporting team performance, and ensuring all food preparation meets Hotel ZaZa's quality and presentation standards.
Position Overview
The Chef de Partie is responsible for the daily operation of an assigned kitchen station and assists in the production of high-quality menu items for restaurant, banquet, in-room dining, and special event operations. This role requires strong culinary skills, leadership abilities, attention to detail, and a commitment to food quality, safety, and consistency.
The ideal candidate is passionate about food, thrives in a fast-paced luxury hospitality environment, and can effectively support culinary operations while mentoring junior culinary associates.
Open availability is required, including mornings, evenings, weekends, holidays, and special events.
Key Responsibilities
- Manage and oversee the daily operations of an assigned kitchen station.
- Prepare, cook, and present menu items according to established recipes and quality standards.
- Ensure consistency in food preparation, taste, presentation, and portion control.
- Assist in training and developing cooks and other culinary team members.
- Maintain proper food handling, sanitation, and storage procedures.
- Monitor product quality and ensure all dishes meet Hotel ZaZa standards.
- Support restaurant, banquet, catering, and in-room dining operations as needed.
- Assist with inventory management, product rotation, and minimizing food waste.
- Maintain accurate labeling, dating, and storage of food products.
- Communicate effectively with culinary leadership regarding operational needs and concerns.
- Ensure all workstations remain clean, organized, and fully stocked throughout each shift.
- Assist with ordering, receiving, and inspecting food products.
- Follow all safety regulations and company policies.
- Maintain knowledge of menu items, ingredients, and preparation techniques.
- Support special events, holiday programming, and banquet functions.
- Work collaboratively with Front of House and culinary teams to deliver exceptional guest experiences.
- Perform additional duties as assigned by culinary leadership.
- Demonstrate professionalism and lead by example at all times.
- Foster a culture of teamwork, accountability, and continuous improvement.
- Assist in coaching and developing culinary team members.

Preferred Qualifications
- Minimum of two (2) years of culinary experience in a hotel, resort, upscale restaurant, or fine-dining environment required.
- Previous experience as a Chef de Partie, Lead Line Cook, or similar supervisory culinary role preferred.
- Culinary degree or professional culinary training preferred.
- Knowledge of food costing, inventory controls, and kitchen operations.
- Experience with banquet production and high-volume service preferred.
- Food Handler Certification required or ability to obtain upon hire.
- ServSafe Certification preferred.
Physical Requirements
- Ability to stand and walk for extended periods during shifts.
- Ability to work in hot, humid, and fast-paced kitchen environments.
- Ability to lift, carry, push, and pull up to 50 pounds regularly.
- Ability to bend, kneel, squat, reach, and perform repetitive motions.
- Ability to safely use kitchen equipment, knives, and other culinary tools.
- Ability to work near ovens, grills, fryers, steamers, and other commercial kitchen equipment.
Work Environment
- Luxury hotel culinary environment including restaurant, banquet, catering, and in-room dining operations.
- Frequent interaction with culinary leadership, service teams, vendors, and hotel associates.
- Exposure to hot surfaces, sharp equipment, cleaning chemicals, and varying kitchen temperatures.
- Fast-paced environment requiring strong attention to detail and multitasking abilities.
- Must be available to work mornings, nights, weekends, holidays, and special events based on operational demands.
- Professional appearance and grooming standards consistent with Hotel ZaZa luxury service expectations.
